Description
KITCHEN HERBS MUSTARD SEEDS
- The Mustard plant belongs to the Brassicaceae family. Annual with erect stem, it has been cultivated since ancient times for its healing and culinary properties. It is easy to grow and gives excellent results even in pots. Its flowers are delicately scented and attract pollinating insects throughout the summer. While the seeds, with their original flavor, can be used in the kitchen.
Use in the kitchen:
- The seeds are odorless and tasteless until they are subjected to a process of grinding and soaking in water, at this point they release an intense aroma and take on the characteristic spicy flavor. Both at an artisanal and industrial level, mustard seeds are mixed with different ingredients (including vinegar, beer, wine) in order to form a grainy cream which, depending on the variety and processing, can be more or less spicy. In the kitchen, mustard is used to flavor various meat recipes, from boiled meat to sausages, to game dishes. Also very popular in sandwiches, such as the famous hot dog, mustard is also combined with sour cheeses, such as stracchino. In addition, mustard is the basis of many sauce recipes, such as remoulade, a French sauce based on mayonnaise, or vinaigrette, to dress salads or meat main courses.
