WILD HERBS SEEDS OF GOOD ENRICO OR MOUNTAIN SPINACH
- Buon-Enrico or Spinacio di Montagna is a perennial herbaceous plant, born spontaneously in mountain and submontane areas at a height of about 2000 meters. The nutritional power of this plant is very high. The leaves are wavy and have the typical shape of an arrow. Only very tender leaves, shoots and seeds are used. The young leaves are eaten like spinach, raw or cooked, in fillings, soups, omelettes and savory pies. The young shoots are excellent and should be collected when they are about 10-12 cm long. The seeds, soaked overnight and then rinsed, can be added to the bread or focaccia dough.
